Answer:
Exchange 2000 server must be configured to communicate with Exchange POP3. The changes to your Exchange server depend on if Exchange POP3 is installed on the same computer as Exchange 2000 or another computer on your network. Below are the instructions for either case.
Also, for either case you will have to set the Default SMTP recipient. Instructions for this are at the end of this page.

Installing Exchange POP3 on same computer as Exchange 2000 server

From your Windows Start Menu, go to:
Start->Programs->Microsoft Exchange->System Manager
From the System Manager expand the Servers branch as follows:
Servers->your exchange server->Protocols->SMTP->Default SMTP Virtual Server
Right click Default SMTP Virtual Server. A set of dialogs will appear.
On the Delivery tab click the Outbound Connections button and change the TCP Port to be 8025.
Click OK.
Again from the Delivery Tab click the Advanced button.
In the Smart Host field enter the TCP/IP address of this computer. Make sure you enclose the TCP/IP address with square brackets [ ]. For example if the TCP/IP address of the computer is 192.168.0.10 then you must enter:
Now run Exchange POP3 Manager.
Go to the Connections->Exchange.
In the right window double-click Settings.
Change the Inbound port to 8025 and the outbound port to 25.
Click OK.
You will have to restart both Exchange server and Exchange POP3.

Setting Default SMTP Recipient

In Exchange 2000 you will have to give all the clients SMTP type addresses which match their Internet email addresses. For example say the user is john@abc.com, then the internet address is john@abc.com for the Exchange Client. To make sure the Virtual SMTP Server accepts messages for the domain abc.com you must modify the default SMTP address.
Modify the Default SMTP Recipient Address
Default SMTP addresses for Exchange mailboxes are created according to the default recipient policy, which is recipient@organization.com.
To modify the default SMTP recipient address:
Start System Manager:
On the Start menu, point to Programs, point to Microsoft Exchange, and then click System Manager.
Cannot Start the Application
You can manually start the application by following these instructions:
On the Start menu, point to Programs, point to Microsoft Exchange, and then click System Manager.
Navigate to Recipient Policies System Manager->Recipients->Recipient Policies
In the details pane, right-click Default Policy, click Properties, and then click the E-Mail Addresses tab.
Under Generation rules, select SMTP, and then click Edit. In Address, type the new default SMTP recipient address.
